Rinse 200 grams of poha (flattened rice) in water and drain the excess water. Set aside for 10 minutes to soften.

In a pan, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of mustard seeds and let them crackle.

Add 1 finely chopped onion, 1 chopped green chili, and 10-12 curry leaves. Sauté until the onion turns translucent.

Add 1/4 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and salt to taste. Mix well.

Add the softened poha to the pan and gently mix until the spices are evenly distributed.

Cover the pan and cook for 5 minutes on low heat, stirring occasionally.

Add 1/4 cup of roasted peanuts and 1 tablespoon of lemon juice. Mix well.
